Festive Pomegranate Guacamole
Need something to bring to your Christmas potluck or party this season? This is the thang for you! It’s so pretty and the pomegranate gives it a nice crunch + juicy flavour.
If you have a corn sensitivity and need a tortilla chip alternative, I discovered a new cracker lately that goes great with this guac - Eve’s Crackers! (even if you don’t have a corn sensitivity….these are a hit!) You can find them in select stores in Canada or order them online. We love them over here - it’s hard not to eat the entire bag.
Festive Pomegranate Guacamole
Serves 4-5
INGREDIENTS:
2 large avocados
1/4 c fresh cilantro, chopped finely
1 garlic clove, minced
1/2 onion, diced
1/4 jalapeno, seeded + minced
1/2 lime juiced
1/4 tsp sea salt (to taste)
1/4 c cherry tomatoes
1/4 tsp chicken stock
1/4 c of pomegranate arils
*A trick I learned from one of my best friends (who is Mexican….so obviously she knows what she is talking about!) is to add chicken stock to your guacamole. It just gives it that little something extra and makes your guac that much more delicious!
DIRECTIONS:
Cut the avocados in half lengthwise. Remove the seed. Scoop out the flesh with a spoon and put into a medium bowl.*
Using a fork, roughly mash avocado. Add the lime juice, red onion, sea salt, cilantro, chicken stock, cherry tomatoes garlic and jalapeño. Season with salt and black pepper, to taste. Continue to mash the avocado until you’ve reached desired consistency. Add more salt to taste.
Stir in the pomegranate arils. Serve immediately.
* If using a mortar and pestle, grind up the onion, garlic, peppers, and tomatoes first to bring out their flavour before adding the rest of the ingredients.
