Enchilada in a Bowl
We were on an enchilada kick, so we decided to keep it going in a different form! Enchiladas in a bowl! It’s a super simple recipe you can throw in your slow cooker and come home to for dinner :)
INGREDIENTS
4 chicken breasts, frozen
1 cup of white rice, uncooked
1 can of green chilies
1 - 10 oz can of enchilada sauce
1 tsp of cumin
1 tsp chilli powder
1 onion, chopped
2 cloves of garlic, minced
5 cups of chicken broth
1 can of black beans
1 L of salsa
1/2 tsp cayenne pepper
1 jalapeno, chopped
Garnish - cilantro, cheese, sour cream, red onion, lime juice
DIRECTIONS:
Add all ingredients to your crockpot except rice. Place chicken breasts in whole, you will shred them later.
Cook on low for 6-8 hours or high for 3-4. Add rice about half way through.
Right before serving, take out the chicken and shred it. Then add it back into the pot and mix to combine well.
Garnish with whatever toppings you would like!
