Arugula Salad with Dijon Vinaigrette

LOOK NO FURTHER - this will be your favourite salad!

My mother in law came to visit last week and made her new favourite salad for us - and no joke its the best! The perfect amount of zest and I love that it’s so simple. I added the pine nuts and hemp hearts and think they are a great addition. This salad has been on repeat this week and will continue to be :)


Not only is it delicious - it is AMAZING for your gallbladder!

  • pain in upper abdomen

  • bloating

  • fatty foods making you feel worse

Tips for good gallbladder health…

  • 25-25 grams of fiber per day

  • address your food sensitivities (I can help you with this ;))

  • Avoid refined and processed foods

  • Include plenty of healthy fats and avoid trans fats

Gallbladder supporting foods:

  • radishes

  • eggs

  • arugula

  • beets

  • lemon

arugula salad. gluten free arugula salad.

Ingredients:

1 teaspoon Dijon mustard

1 clove, minced fresh garlic

4 tablespoons white wine vinegar

Kosher salt and freshly ground black pepper

1/4 c pine nuts

1/4 cup olive oil

5 oz container of baby arugula

hemp hearts to sprinkle on top

Directions

  1. In a small bowl, whisk together the mustard, garlic, vinegar & salt and pepper to taste. While whisking, slowly add the olive oil until the vinaigrette is emulsified.

  2. Broil pine nuts till they are toasted (browned.)

  3. Place the arugula in a medium bowl and add enough dressing to moisten. Sprinkle with a little extra salt and pepper, if desired. Sprinkle pine nuts & hemp hearts on top and serve!

*Some other things we love to add in are beets, shredded carrots, shredded chicken and sourdough croutons! Honestly, the options are endless!
